Perth born Chef, Paul Salmeri, has always had a passion for food. Growing up in an Italian household eating was just a part of life, with vegetables growing in the Garden and watching his Father cook, an interest of good food was always there. After six years in the Australian Navy it was time to take his love for food seriously and professionally and it wasn’t long after he moved to Florence, Italy, to attend the Apicius International Culinary School.

Whilst combining his studies with running Tuscan food and wine tours, he was awarded in 2007 “The James Beard Scholarship”.

After Graduating, Paul commenced working at the Apicius Culinary School and Florence University of Arts partner restaurant, “Ganzo”. There Paul worked up to Sous Chef and then Restaurant Manager. Ganzo is an artistic space where students learn from other Chefs about both the kitchen and front of house operations. Summer breaks were spent traveling all over Italy learning more about regional Italian food and working at Ristorante “Il Capriccio”, it was here Paul learnt the art of Sicilian cuisine.

To continue developing his cooking, in 2012 Paul accepted a job at the prestigious Michelin Star restaurant “The River Café”, London. It was here under the guidance of Chef Ruth Rogers, in one of the finest Italian kitchens in London, that Paul truly developed and fine-tuned his skills.

Paul returned to Australia in 2015 and launched the ‘Chef Salmeri’ enterprise that delivers his culinary passion through a range of exciting offerings!

Chef Salmeri catered a beautiful dinner for us and a number of our important clients. We had 16 people and the Chef catered to our requests with ease and produced an amazing multi-course feast which gained rave reviews from all in attendance.

Luckily we were successful in purchasing the “Chef Salmeri Luncheon” package for 12 people at a charity auction where Paul had generously donated his time and all the produce to prepare a meal for 12 guests.

Not knowing Paul previously we were unaware of his background or cooking expertise but WOW is the only word to describe our experience working with him to deliver a truly inimitable event for ourselves and our guests.
Paul came to our house 3-weeks before to discuss our preferred menu and throw around some ideas to make the event memorable. A truly affable yet total professional, Paul created the perfect menu for our “Winter in Tuscany” themed event.

On the day, Paul arrived early to prepare what was to be an authentic Italian “Peasant” family four course feast for a cold and overcast July day. The meal was far from Peasant and he delivered sumptuous yet delicate Italian food from beautiful local fresh produce much to the delight of us all. He cooked, he cleaned and he conversed with the guests inviting them to assist with or witness the food preparation in our kitchen.
