4 whole baby snapper
120g Black Olives
50 ml Dry White wine
Salt and Pepper
Extra virgin olive oil
Get your fishmonger to scale, clean and trim your baby snapper.
Preheat your oven to 180c
On an angle slice your fish on both sides 3 times down the body.
Slice thinly lemon, and in the groves of the fish place a bay leaf and lemon slice
Season both sides of your fish with salt and pepper and place on baking tray.
Drizzle with a little extra virgin olive oil and place in the oven for 10 min.
Take your fish out and splash with white wine and back in the oven for a further 5 min. Take your fish out and rest for 5 min then serve with a wedge of lemon, salad of your choice and any pan juices.
